My sister picked the flowers. (:

This was quite a challenge. The flowers were tall and it would be a pity to cut it short but I had to use the shorter vase because my sister's taller vase was broken by the workers that renovated her house.

It was a delicate balancing act to make it stand since there was no pebbles to hold it up. I decided to use the stems and leaves and I cheated by using the ribbon to tie and hold it together.

It worked. (:

When it is Christmas, I am free to bake and I love baking Pavlova the most because the meringue is just so pretty!

iNGREDIENTS

FOR THE CHOCOLATE MERINGUE BASE:

6 egg whites
300g caster sugar
3 tablespoons cocoa powder, sieved
1 teaspoon balsamic or red wine vinegar
50g dark chocolate, finely chopped

FOR THE TOPPING:

500ml double cream
500g raspberries
2-3 tablespoons coarsely grated dark chocolate

METHOD

Preheat the oven to 180°C/gas mark 4 and line a baking tray with baking parchment.
Beat the egg whites until satiny peaks form, and then beat in the sugar a spoonful at a time until the meringue is stiff and shiny. Sprinkle over the cocoa and vinegar, and the chopped chocolate. Then gently fold everything until the cocoa is thoroughly mixed in. Mound on to a baking sheet in a fat circle approximately 23cm in diameter, smoothing the sides and top. Place in the oven, then immediately turn the temperature down to 150°C/gas mark 2 and cook for about one to one and a quarter hours. When it's ready it should look crisp around the edges and on the sides and be dry on top, but when you prod the centre you should feel the promise of squidginess beneath your fingers. Turn off the oven and open the door slightly, and let the chocolate meringue disc cool completely.
When you're ready to serve, invert on to a big, flat-bottomed plate. Whisk the cream till thick but still soft and pile it on top of the meringue, then scatter over the raspberries. Coarsely grate the chocolate so that you get curls rather than rubble, as you don't want the raspberries' luscious colour and form to be obscured, and sprinkle haphazardly over the top, letting some fall, as it will, on the plate's rim.

Serves: 8-10.

Isn't he just so darn incredible???

His every move is so raw with emotions and with so much control that watching him just takes your breath away. That invisible strength he has that made every move look effortless is just spectacular. I don't think people understand just how much control he needs to have over his every movement just so he won't look like a mess.

Not to mention, this is such an insanely well-choreographed dance! It is tightly woven, with no loopholes to pick at. Upsetting is such an apt word to use to describe how I felt watching him for the dance is fill with so much sadness. His style is just so unique and different with a flavour of his own.

As a dancer, a contemporary dancer, being able to move seamlessly, project so fully the emotions of a dance and execute the dance flawlessly is an immense achievement. Teddy did this (at least to me ^^). If he keeps this up, he will definitely be the one to look out for in the Contemporary world of dancing.

AND he is only 18.

This guy should not exist. :D

What I am most impressed with about him is his ability to come with such a simple innovation that work so well and use his position in society to bring it a little further advocating for what he believe in not just in a form of a website but in action as well. The idea is new and refreshing. Plus, the notion of being able to share your creation is a wonderful way inspire others. It allows your work to be selflessly part of something bigger.

I adore people who daringly create innovations like these to advocate what they believe in with everything they can offer. It's utterly inspiring. (:

Orange French Toast!

Once again Nigella didn't disappoint me. :D Really yummy.

I thought it would be really easy and would definitely not make a mess. Unfortunately, I overestimate my cooking ability. :D Apparently, butter can get really hot.

Thankfully, it turned out well. My mom liked it. (:

RECIPE!
2 eggs
grated zest of 1 orange
60ml full-fat milk
1/4 teaspoon ground cinnamon
2 large, thick slices white bread or 4 smaller slices
juice of 1 orange
75g fine-cut marmalade, such as Tiptree “crystal”
50g caster sugar
1 x 15ml tablespoon butter

Whisk the eggs, orange zest, milk and ground cinnamon in a wide shallow dish.
Soak the bread slices in this mixture for 2 minutes a side.
While the eggy bread is soaking, bring the orange juice, marmalade and sugar to the boil in a saucepan, then turn down the heat to a fast simmer for 3–4 minutes. If you need to, let this syrup stand while you cook the bread.
Heat the butter in a heavy-based frying pan and cook the eggy bread for about 2 minutes a side over a medium heat until golden.
Serve the French toast with some of the amber syrup poured over each slice, and a jug of extra syrup on the side.

I was shopping in the grocery store when I stumbled upon this:

Isn't that just brilliant? It is so wonderful to know that whatever you are eating is not a product that contributes to poverty due to big corporate company bullying.

Butter biscuit with a dark chocolate layer. (:

Besides, it is pretty yummy and very addictive. Although the dark chocolate is only about 40%, it is not overly sweet. The smooth dark chocolate went so well with the layer of grainy, wheat butter biscuit. I do wish that the biscuit is a bit less thick, though.

Anyway, eradicating poverty does not have to be a big step. We can all contribute and start off with something small like getting products that only has the Fairtrade mark. (:

Nigella's Store Cupboard Chocolate Raspberry Cake

I made this for a friend's birthday a while back ago.

It is a really dense cake. :D

I didn't have any icing sugar unfortunately so I had to use like caster sugar. Think Icing sugar would have been way better.

RECIPE!

125g unsalted butter
100g dark chocolate, broken in pieces
300g good thin-cut marmalade
(originally, it was with orange marmalade but any other flavour is fine really.)
150g caster sugar
pinch of salt
2 large eggs, beaten
150g self raising flour

Preheat oven to 180C / gas mark 4. Butter and flour a 20cm springform tin.

Put butter in heavy-bottomed saucepan and put over low heat to melt.
When nearly completely melted stir in the chocolate pieces.
Leave for a minute to begin softening then take pan off the heat and stir with a wooden spoon until butter and choc are smooth and melted.
Now add marmalade, sugar, salt and beaten eggs.
Stir with wooden spoon and when well mixed, bean in flour bit by bit.
Pour into prepared tin and bake for about 50 min or until a cake tester comes out clean.
Cool in pan on a rack for 10 min before turning out.

I'll make it with orange marmalade next time since it is such a dense cake. The orange would balance the chocolate cake better.

Sorry for the photo spam. I stayed there with my friend till closing so we ordered a lot of food and I took a lot of photos. :D I love how laidback it feels, the ambience is so warm and cosy. Wonderful for parties and gatherings (which they do too) or just to catch up with a friend.

Of course, their highlight is still the coffee, their really brilliant coffee that always taste so superb. They have amazing drink creations like Chocolate Earl Grey Milkshake which is so lovely, their desserts like Banana Rum Crumble are another creation I really love.

Real caffe latte taste like this.

The most worth it $5 I have ever spent on coffee. The coffee here is so ridiculously good that I never ever drink any coffee that isn't from black since I tried it. Coffee should never be so hot that you can't drink it right away. What I really love about the coffee here besides the flavor is how I can have it immediately and not 10-15 mins later.

The milk is not burnt!!!
It is not too milky that all you taste is milk
The espresso is not lost and strong enough
It is the perfect balance of steamed milk and espresso

I had this a while back at the other branch (my friend ordered the one you see here), I still remembered how pleased I was with it. Being an espresso lover, I love it when it is not drowned out by milk. Like the latte, it was the perfect balance of milk and espresso. It is definitely stronger than the latte just like it should be.

Although, to be very honest, the foam was not that great. It wasn't tiny, smooth and velvety in the way that it isn't in harmony with the espresso.

I love this! Isn't it just adorable and witty???

The atmosphere here is interesting, very different from the laid back style of their other branch. It is a little more fast paced here, all the business man or woman chatting over coffee about their work, the shares market, latest headlines and office gossip. Very modern, very upbeat.

I like it here too though this isn't the branch I first visited and the one that made me fall in with black.

It was their other branch at Somerset which I will cover in my next post with more photos of food and wonderful dessert! (:

Cutest book store ever!

This place actually specializes in selling children books. There are tons of picture book there for picture book lovers as well. They even have my favourite childhood comic "Tintin"!

This is definitely one of the places I would go to when I had a particularly bad day. Not just the fact that the children book selection there is simply awesome but also because the ambience there is great. So much thought went into the décor of the place! Spending time there is just therapeutic. (:

Well, I didn't take photo of the whole shop because it was actually not allowed. That is something I realize on after spending an hour taking tons of photos there. :D The shop keepers were such darlings since they did not at all made a fuse about it.

Something I did near my exam period. :D

It was kind of rush since I didn't think it would take the administration this long to process my proposal. I wasn't sure if it would go well since it was completely self-initiated so I could only publicize it through my own network.

Thankfully, it was pretty successful in the end despite the limited publicity. (:

There were really many kind heart people who really cares for the people affected by the earthquake. It was amazing to see people that I don't even know walk pass, see the sign, stop in their tracks and donate very very generously.

It was one of those moments that prove that Singaporeans and Singapore Youths do care and have hearts.

Thank you everyone who donated! The money has been donated to Red Cross already. (: School has the receipts so if you want to confirm your money went to Red Cross, ask SDAR. (:

They forgot to put the icing on the lava cake. :D

They knew that it was my birthday so they wrote a greeting for me on the plate with an icing and place a candle on the cake. (: Isn't that sweet?

Surprisingly scrumptious.

Usually lava cakes' chocolate centers are burnt and has that burnt taste. I was expecting this to have a burnt taste as well but I was completely wrong. Not only was it well-cooked, the center is gooey and the taste is concentrated.

A wonderfully crafted warm dessert that was paired with a soft cold vanilla ice cream that is very well made, refreshing and not at all milky or odd tasting. Absolutely fantastic. (:

The best lava cake I have ever eaten!

They opened a bottle of dry and bubbly Prosecco to help celebrate my birthday. I am not a fan of gas-y stuff but I drank them both since it was extremely darling of them. (:

I had so much fun there! The staff were really respectful, friendly, warm and darling! There was such a homely atmosphere that it feels like you are having dinner at a friends' place.

I'm definitely going to go back there again! (:

I found something very beautiful and very inspiring on TED.com

It is a story about a journey of a dying man and his brother who are both intent on making something positive about the whole situation.

They managed to create a website, PatientsLikeMe.com, that provides support for others and help explain and predict certain symptoms or future outcome of patients with the same disease. You can create timelines of a patients conditions to see if patients taking the same drugs or certain therapy (they even have one on prayer). You can also seen charts of effectiveness of some drugs or certain therapy and compare it with other patients. See real data that shows what are the different drugs, even experimental, taken to relieve a certain symptom or disease. All these data displayed in a meaningful way.

I found it amazing that this website was created with such a beautiful, positive and heartwarming intent and not a greedy one where money can be made out of this but just a website to cater to patients.

As doctors, they know all the statistics available for side effects and possible outcome by giving a certain drug after seeing patients of the same disease and reading tons of medical journals.

Patients, on the other hand, either have no access to such real data or have no knowledge of them and can easily be misled by random publications that are completely incorrect in their theories or studies just like the example in the video.

This website gives patients a place to do their own research, to have a say about their own treatment and to gain some control over their own lives. You can even print data out for doctors to analyze.

Patient-doctor communication is extremely crucial. Patients have to know that they need to participate in the diagnosis and treatment of their medical condition. I had to tip toe and hold it up high so I had no idea what I was filming. :D There were so many many people holding up their cameras, it is hard to see anything even if you are standing on a chair.

The tension and excitement in the air was so high that one scream ignite many others. It was kind of amusing! I had so much fun. The fans were all so adorable and such sweetie pies. Really enjoyed myself to the point where I'm very fond of the fans.

Chocolate Indulgence.

I was shopping in ION's ThreeSixty Marketplace when I came across Valrhona store in it. It got me totally psyche since you really can't find this brand in any supermarket and I know that it is one of the really yummy yummy really good chocolate brands. They are great to make desserts with or just to eat of the bar.

Within a few seconds, I knew I just HAD to get a bar from there even though I was suppose to be saving money. I was attended by this very knowledgeable and delightful retail sales assistant who was a complete darl. He let me try a few samples and whatever he suggested I liked it a lot. Then again, it could be just that the chocolate is really amazing. :D

After at least 15 minutes or so, I finally settled on one of their three vintage 2009 bar. According to the sales assistant, you have to wait till the end of 2010 to get these premium bars which uses cocoa from the best cocoa plantation (Venezuela, Madagascar and Caribbean) and during the best seasons (which is apparently from September to October).

Guess which cocoa plantation did I pick?

Venezuela! I think I watched too much of "Willie's Chocolate Revolution". :D

It really wasn't kidding when it mentioned that it has "notes of honey and nuts". The distinctive nutty flavor of cocoa, especially when the percentage of cocoa increases, hits you when you take your first bite. Then slowly, the sweet honey taste delicately seeps in and seems to be dancing in your mouth. It isn't overwhelming but very well balanced and well-rounded.

The amazing thing is: it honestly taste like honey but honey is not added into the chocolate! It couldn't have been added in since honey would make the chocolate sticky and this chocolate is anything but sticky.

Really great chocolate, I love it so much!!!

I think I would go back for the Madagascar bar. I tried it at the store and it has a really strong nutty roasted taste and a very very subtle citric notes. It is really full-flavoured, intense and wonderfully warm.

You guys have to try it!

Introducing the Molenaar Younge designed by Dan Molenaar. It is an off-the-grid getaway that is right smack in the middle nature - surrounded by a forest and near a lake. The design and concept is surprisingly simple and I just love how eco-friendly it is. This goes to show that amazing designs can be produced without using materials that harm the earth.

Given my absolute love for floor to ceiling windows, you can guess that what really appealed to me is the usage of huge pieces of reflective glasses as walls of the house. Each of this window is framed by dark fir beams that blends completely into the surrounding. These giant windows reflect the surroundings and camouflage the house.

In the picture below, you can see this platform that extends out, facing the lake and hangs mid-air. Standing there will give you a feeling of being suspended mid-air in the forest being surrounded by trees and gives you a picturesque view of the lake which is perfect for nature lovers.

At night, the highly reflective windows actually becomes a completely transparent and you can see the interior from the outside. I love how they would light the house up with candles everywhere and the house just glows in the middle of the forest like a enormous lamp.

Every aspect of this house is just absolute love. You have glass windows, wood furnishings, a spectacular view of both the forest and the lake, it is located right smack in the nature, it is eco-friendly and relatively cheap.

How much more perfect can it be?

The little but meaningful presents I was blessed with.

These are given by my mother, who chose them and gave a lot of thought into the gift. She initially wanted to get this necklace with an adorable owl because I sleep late all the time but she knew that I love dogs and wants to go Paris badly so she got this instead. Terribly sweet of her. (:

This all in one memory card reader is a present I got from my very very first Christmas gift exchange at the Loh's on Benjamin's (who is the cutest baby I have ever seen) 1st months. It was such a wonderful heartwarming time of thanksgiving, giving, sharing and receiving. It was filled with laughter and appreciation for Christmas and God's providence. To me, this present is really meaningful.

I was suppose to share this amazing and famous encyclopedia of French cuisine with my brother-in-law (who loves cooking and food as much as I do) but his wife who is my lovely sister offered to get this for me for Christmas. Thus, it became a present shared between the three of us. :D

I can't wait to start on it but once I star I won't want to stop so I decided to only open it during my semester's break. I want to properly analyse this book inside out. :D

Therefore, on the fifth day of Christmas, I shall share with you my absolute favourite glassware artist.

Höglund Art Glass by Ola Höglund and Marie Simberg-Höglund

They are all individually blown and some are a combination of two blown glasses, therefore you get the different layers and different colours. Isn't the colours so pretty and just so bold? I saw them with my eyes and really, it is so so gorgeous.

The lines of his vases are so clean and simple. The designs are just so divine and truly well-thought out. In every and in any dimension, it is just a masterpiece.

The craftwork is also just so delicate and flawless. The skills of the glassblower Ola Höglund is just simply unmatchable.

I so wanna own one of his work!!!!!!

I made a three course meal. (: I actually didn't plan on the dessert but I just had such a craving. Besides it felt incomplete. :D The main course was something I decided along the way actually.

Antipasta - Stuffed tomatoes

Fried garlic, mushrooms, honey baked ham, oregano, parsley, olive oil and chilli.

I added a little too much garlic though. :D

Main Course - Marinated sliced fish

Sauce: Leftover tomato seeds and flesh of the stuffed tomatoes, two green chillies, fish sauce and white grounded pepper.

I made the marinating sauce myself. (:

It was a lot of experimenting and a lot of fun. I drizzled lemon juice on the fish before marinating it to kill of any sea smell.

Dessert - Chocolate goo with orange

Chocolate, marshmallow, milk, butter, vanilla essence and mandarin orange.

It wasn't quite a mousse since I didn't have any heavy cream and neither was it fully a pudding so I had no idea what to call it so I call it "goo". (: I added quite a bit of milk to make it more runny and less thick so the consistency is like a light mousse or soft pudding. It was easy to make and incredibly lovely.

It would be even more delicious with lemon zest or orange zest when melting the chocolate and mixing everything on over low heat. (:

As I mentioned in the previous post, I had a Christmas party on the 25th. Most of the food were settled by my mother and she pretty much refuse to let me go into the kitchen and make or bake anything.

So I made her allow me to do the floral arrangement instead. :D Really thankful to God that it turned out well and everyone loved it. (:

I love love this place simply because they carry Rolf Benz and Ligne Roset who have both recently became my favourite brands. Every piece you find in Rolf Benz and Ligne Roset is clearly a well-thought design.

I love how comfort and design are interlinked together, especially in designs from Rolf Benz. This makes them not only gorgeous designs but also functional. Ligne Roset piece are all unique and interesting. They play with not just colours but also textures, which I find lovely.

My favourite designs from here wasn't on the web, unfortunately. It is a very spectacular piece that was simple rectangular frames that goes through long thick pole and hung on it. It was asymmetrical and very simple but when i walked in and saw that, I immediately was impressed by it.

Personally, I think Marquis is better at the dark, rich and earthly look because of all their installations, I like this look the best. Maybe it was because of how the showrooms were decorated and designed. I really wasn't very impressed with their white look. The products seemed washed down by the arrangement and it reminds me of bad quality white chocolates.

Nonetheless, they do carry quite a couple of wonderful furnitures that are well designed.

I met up with a bunch of my most darling friends and we had a picnic together at Botanical Garden. (:

We had such a good time! The weather was great despite the rain in the morning. There was only a little small sprinkle of rain and it was pretty cooling. Plus the food was so good and the company was fabulous. (:

I made Rasperry Chocolate Pavlova and an antioxidant fruit salad. Both are Nigella's recipes. For those who know me, you will know that I ADORE Nigella. She is totally my "sifu" (master in Chinese)!

The awesome place Jie Min and Wan Ying got the really delicious pizzas from.

This was a house specialty that is simply heavenly. You can smell the herbs and button mushrooms the moment you open the box. The cheese was just oozing out and the parma ham was just so delicious! They have this sauce you can eat the pizza with and my goodness, the sauce just brings such a different taste to the pizza and it blends so well with the pizza's flavours. A total must try!

This one wasn't as nice as the house specialties but still yummy.

My antioxidant fruit salad made of mango, pomegranate and blueberries with a little touch of lime juice. Very healthy and I like it. :D Though it is a bit sharp.

After this Wan Ying and I went off to shop and walked around quite a bit looking at lovely awesome shops. (Found quite a few gems, I'll post about them when I have the chance to.) We wrapped up the day with dinner at Oriole (One of my favourite hangout place). We had pasta, quesadillas and sparkling wine (Moscato). I didn't book before going down.

It never crossed my mind that it would be fully booked so we ended up sitting outside which had horrible lighting thus I have no pictures to share. :D I go there all the time anyway so will post pictures of it in the future. (:

It finally feels like Christmas is here to me.

And I am totally loving it.

Things I Do Before a Common Test.

I was so tempted to make something yummy and chocolate-y that I just didn't care about the paper I am having tomorrow and went to make a Chocolate Rosemary Jam. :D :D :D

I know it sound weird. I would rather put cinnamon but my grounded cinnamon is expired. I wanted to make it a little different so I added rosemary. :D :D :D Since I added about 3 huge marshmallow in, it is a little gooey and very very thick and intense which is perfect to put on plain bread. I sneakily added a teaspoon of vanilla essence because I love the smell of it. The vanilla essence made it so much more flavourful and a little heavy.

I ate a few mouthful without the bread, gave me an absolute sugar high. :D

This, my friends, is the wonderful, lovely, gorgeous SALMON. :D I have a thing for them.

It was grilled for about 20 minutes then drizzled with this Japanese sesame sauce called Kinnogomadare then grilled for another 5-8 minutes.

Simply lovely. Some oregano on top would be perfect. (:
